I am going out of town for 2 weeks on vacation, and I
wanted to know if/how you can set up Outlook to
automatically send an email (basically just a "heads-up"
that I will be away from the office and will reply in 14
days) to reply to each email I receive while I'm gone...
Does anyone know how to do this?

If you're connected to Exchange, turn on the Out of Office Assistant. If
not, set up a rule. See http://support.microsoft.com/?id=311107 . In the
latter case, you'll have to leave your computer and Outlook running while
you're gone.
