Automatic completion of email addresses

I used to be able to begin typing email addresses and they would
automatically complete themselves. For some reason that is no longer
happening. I recently switched email servers from Outlook Express to
Microsoft Office. Could it be that Express has that feature, but not Office?

Yep - if you're using anything but OL2002/2003 which have autocomplete.
 
I meant to say I recently switched to Microsoft Outlook (not Office); and I
should have been more specific to say Microsoft Outlook 2000.

I assume the "OL2002/2003" in your answer stands for "Microsoft Outlook 2002
or 2003".

Therefore, I understand that Outlook Express allows autocomplete, but
Microsoft Outlet 2000 does not.

That's correct.
Outlook 2000 and earlier have a feature called autoresolve - meaning, you
can type the first few letters of a recipient's name/address, and either
toggle to another field, press CTRL+K or the Check Names button, and it will
look up to anything defined in your address book (which should by default
be/include your contacts folder)

OL2002 and 2003 have autoresolve and a form of autocomplete - meaning,
anything you've entered before will autocomplete as you type. But it doesn't
do lookups to your contacts folder the way OE does lookups to your windows
address book.

OL2000 uses a technology known as autoresolution. Autocomplete did not
appear til the XP or 2003 versions. Autoresolution is where OL trys to find
a match in your address book when you begin to type a name. Autocompletion
stores the info. in a hidden, system file called an NK2 file.

If you want more info on that, I'd suggest a Google search on NK2.
