Does anyone know how to turn off and delete stored data
pertaining to the auto complete ( I am not sure if that it
is what the proper term is ) function of 2000

Try this

Internet Explorer select Tools, Internet Options and go
to the Content tab.
There click the AutoComplete button.
On the next screen you can select to turn
on/off different AutoComplete settings and
you can clear the history for forms and passwords.

Clearing incorrect entries:
The easiest way to clear out some entries, but not all of them, is to start
typing the entry you want to delete. For example, let's assume you have
"Daun" and "Daum" in a list and you want to get rid of "Daum". Just start
typing in the data and when you see "Daum", put your mouse cursor over it so
it's highlighted but DO NOT CLICK IT. Press the "Del" key on your keyboard
and that single entry will be removed.
Repeat as necessary.
