What would you recommend for securing a FreeBSD Mail-Gateway? Any trends?

F-Prot has a product for FreeBSD, Amavis can use various engines and the ports
collection lists some: http://www.freebsd.org/cgi/ports.cgi?query=virus&stype=all

A handfull of of reg-exp body_checks could go a long way also, depending on
your needs.
