When writing a letter, I want to be able to use "Yours sincerely" and Yours
faithfully using the All Entries "Closing" facility. How can I change the
entries that come with the program?

Those entries are part of the AutoText feature. You can add your own;
they'll be placed in the category with the same name as the style
applied to the text used to create them.

Type one of the new entries in any document based on Normal.dot (a new
blank document will do). Select the whole entry.

While that text is selected, use Format > Style to apply the Closing
style to it.

Then press Alt+F3 to open the Create AutoText dialog. By default, the
name of the AutoText is the same as the selected text. You can change
this if you want, or leave it. Click OK.

Repeat the whole thing for the other entry.
