I'm switching over to Mozilla Thunderbird and plan on giving my copy of
Outlook 2003 to my niece. If she installs and activates it on her PC, will
that automatically cancel my activation, or are there steps I need to take
to deactivate it before I pass it on to her? Any help appreciated.

You cannot "de-activate" the software. Your niece will need to activate it,
probably by telephone.

Another reason to NOT use such software...

I have a recommendation...

Download and install Palm desktop. Its a free download from palmone.
Its very easy to use and backup. It doesn't do EMAIL (Thurnderbird is
more secure) - but does work quite well.

And if she ever needs a PDA, its readdy to go.

Palm Desktop and Outlook serve different purposes. Palm desktop is not an
Outlook replacement. Evaluate each on its own merits but suggesting that PD
is an Outlook replacement only shows your prejudice and ignorance.
