Access Administrative User Profile Data from recovered Hard Drive

I have heard that XP Pro might enable you to change permissions of
administrative accounts?

Here is my problem:

I had a Compac Presario 2700 running XP Pro, that the ex-girlfriend
destroyed by trying to wash it with conditioner. Great way to start
the new year. I was able to recover the hard drive and connect it to
an IDE of a desktop and access most of the data. It shows up as
another drive letter.

However, I am unable to recover my Outlook data because my account was
an adminstrator and I don't have rights to browse that part of the
recovered hard drive. C:\Document and Settings\[User Name]

Any suggestions? Can I boot that hard drive from the desktop instead
of accessing it as another drive?
