You need to disable services in the Services manager, found under
Administrative Tools in Control Panel. Go to www.blackviper.com for an
explanation of what all the services are and suggestions for whether to
disable them or not. No email service unless you want to pay me a
consulting fee.

Not sure about removing them per se but Black Viper has lots of information (he is not universally loved AFAIK but he is very informative and provides a starting point at any rate if you don't want to take his word as the last word).
http://www.blkviper.com/index.html. There is also the Elder Geek at http://www.theeldergeek.com/services_guide.htm#Services. HTH in pointing you to a jumping off point. Don't forget Google!
