2G limitation of OST file

What happens if there are more than 2G emails which are required to
synchronize to OST file? Would it create multiple one when approaching size
limit?

No, I think it will just stop working. Using OL2003 will let you have a
larger OST file (use cached mode; it's very nice to have)
