Requesting a volunteer not appointing a task

I have a large email group for a task that I need to request someone to take
the lead on a weekly basis, this is a recurring task that I request
volunteers for. What's the best way, once I get a volunteer that the rest
of the people no longer see the request? I currently send an email and keep
track using voting buttons and usually end up with seven volunteers and have
to email them all to say I already have a name. It take more time than worth
right now. Any suggestions???

send them voting buttons with the weeks and each can pick a week (at least
you have to only arrange this every 6 to 10 weeks)
