You can edit the boot.ini file to take out the menu option for the other OS.

You will remove the entry that reads:
multi(0)disk(0)rdisk(0)partition(1)\WINNT="Microsoft Windows 2000
Professional" /fastdetect
You can delete the folder that the unwanted install is located in. If
Windows 2000 Professional was installed in the default location the
directory will be c:\winnt.
