Is file sharing on a home network only for sharing stored files such as
documents and photographs, or can a program on one computer be executed from
another computer?

It depends on the program. For instance, you can buy a network version
of QuickBooks which will do what you want while the regular version
will not. Many niche software programs run from one computer which
holds the program's database with client software on each workstation.
Again, this capability completely depends on the program, not Windows
file/printer sharing.

In general, programs on one computer can be executed from another computer, just
as well as files on one computer can be read from another computer. If a
program is small and self-contained.

Most major applications, that require installation, will create additional files
local to the computer that they are installed on. Applications written for
Windows frequently create entries in the registry, which is accessible only to
the computer that the program is installed on.

In short, the best answer to your somewhat vague question is "it depends".
