Sharing access, but restricting access to some messages

I've given a colleague access to my inbox to process routine project-related
e-mails while I'm away, this is a permanent state of affairs. Is there a way
for people to send me private messages that can't be read by my colleague?

Yes, by exactly doing that;
-senders should mark the sensitivity level as private when sending a message
-don't give permission to delegates to read items marked as private

Another way to go would be to direct private messages to another folder by
using rules.

I can't see how to do that - the "permissions" tab on the inbox properties
allows me to add users and give them a permission level, but none of that
relates to the message flags. Am I looking in the wrong place?

Could do the folder thing, can see how that would work, but I'd rather leave
in inbox if poss.

The "Show private items" permission is for the entire mailbox and thus has
to be set via;
Tools-> Options-> tab Delegates
