send options not valid

I used to be able to specify a particular message format for individual
contacts. Now, when I click on the 'Send Options' for a Contact I get a
'Cannot perform the requested operation. The command is not valid for this
recipient. To set options for this message, click Options on the toolbar.'
I know how to change the options for an individual message - I need to be
able to set the format for all messages sent to a particular contact, wihtout
having to remember to do it every time.

What's that?
That option can only be set in the Email properties dialog (accessed by a
double click the email address field).

Thanks Russ,
Between submitting my post and receiving your reply I actually stumbled
across the answer myself - I just kept clicking all possible places and
eventually double clicked the address field and found the option! Hadn't got
back to this discussion to say 'problem solved'.
I had been looking in the options offered when you right click the address
field - one is "Send Options" which resluted in the error message of my
original post.
