Remotely view log files (History)?

I have numerous clients running Defender on a network. I have a need to see
if certain programs have been allowed or blocked. Does Defender create
viewable log files?

Defender creates log records in the System events log, with source
"windefend."

This is definitely something you can view, aggregate, and analyze remotely.

You should be looking at Microsoft Client Protection, however, which will
contain admin consoles that both report such events and allow control over
them:
