Can the code that creates the "list of Figures" be modified to make it
automatically create the list using a specific fontsize?

The reason I ask is because it currently creates the "list of Figures"
in fontsize 11. After I update the field, I then select it and change it
to fontsize 9. Easy to do, but it would be nice if the update would
automatically create the updates in fontsize 9. Can that be done by
modifying the code?

Modify the style that Word applies to the list of figures and change the
font size to 9. By default, this is the Table of Figures paragraph style.

Please state your version of Word for specific assistance.

Thank you. That is very helpful. I should have thought of that.
I use Word 2002 (and Word 2007).

In Word 2002 (and 2003), you have to click Format | Styles and Formatting to
display the task pane. Make sure you set to it show all styles, which is
unnecessarily convoluted <sigh>, and then right-click the style name in the
task pane, and finally choose Modify from the context menu. In Word 2007 and
later, press Ctrl+Shift+S to display the Apply Styles pane, type in Table of
Figures and then click Modify.
