Whenever I try to open an Excel or Word file in multiple SharePoint sites
from both a desktop and laptop I get the following error message and IE
crashes.

Faulting application iexplore.exe, version 6.0.2900.5512, faulting module
kernel32.dll, version 5.1.2600.5781, fault address 0x00012afb.

Okay - "multiple sharepoint sites" and "both a desktop and laptop"...

Do other machines have trouble getting the same files from said sharepoint
sites?
Are the sharepoint sites in the same farm?
Who installed the desktop and laptop and who maintains them?

In other words - if it works from other machines (other than the two
mentioned) and the two machines were installed/maintained by the same
individual - it is possible that you have found the root cause.

If it does not work from other machines - then the sharepoint farm could be
a problem, contact that admin.

Otherwise - you really have given too little information. All I can tell is
that these machines are still running Internet Explorer 6 and I would
suppose Windows XP of some unknown flavor and version. I'm not even sure if
the latest patches are installed fro IE6 or even which version of Microsoft
Office (if any) is installed.
