Currently connected to my Dell Dimension 8200 is an HP 2210 All-in-One
printer-fax-copier-scanner connected to a USB port. I am adding an HP
Laserjet 1012 to another USB port. If I make the laserjet the default
printer will this affect the auto receipt of incoming faxes to the 2210?

Nope. One has nothing to do with the other. You should be OK.
