In the inbox, when right click on a message in the flag column, the contextual menu show "Red Flag" "Blue Flag" "Green Flag" ...
Is it possible to change these labels ? ( like in the calendar where it is possible to change categories affected to colors

Thanks

You can't change the color labels themselves, but this trick might work for
you: Create a new custom toolbar and add all the flags to it. Then change
the caption for each button to whatever youi want that flag to mean for you.
