I know of only 2 ways. The update query as mentioned by schasteen or by
pressing Ctrl+' while in the field below the desired value. But that will do
only one field at a time.
Note I said "field" not "cell". The only cells associated with Access are
the padded ones that we developers end up in after working in Access for
several years.
