It has been a LONG time since I have used Excel, and I am finding now that
there is a great demand for highly polished Excel users out there, and I
would like to become one, any suggestions on how to supplement the limeited
knowledge I already have?

You can try byreplicating the questions and answers posted in these forums.
Practice and putting yourself in new situations is the only way to learn
everything that Excel can do.

mvps.org is also a good place to start (click the excel link on the right
side of the page).

Many of these sites have formula/vb code examples, tutorials, white papers,
book recommendations (I've read some of John Walkenbach's and can recommend
those).

A couple more I can think of off of the top of my head that I like:

One more site with lots of useful Excel info (including a great list of Excel
related books)

Try clicking the [Tips] button on that page and it'll lead to an index of
many Excel subjects with solutions.
