Emailing Contacts

When sending emails, I typically type the name of the
contact in the "To" field. Usually after typing a few
characters, the person's name and email pop up and I
select it.

I have a curious problem: when I change someone's email
address in Contacts, and then try to email as per above,
the old address pops up - it doesn't even show the new
address as an option. How can I remedy this?

You have misunderstood autocompletion. Autocompletion does not use your
"address book" (i.e., Contacts Folders). It only uses a cache of recipients
to whom you've already sent messages.
Remove individual addresses from the autocompletion cache by highlighting
the entry when presented in the suggested names list (use your arrow key to
migrate to the entry) and then hitting your Delete key before you tab out of
the field. To clear the entire cache, follow the instructions here:
