Issues with gaming on Vista Ultimate

I am having a weird problem the past couple of days on Vista Ultimate.
While playing EQ2 (please note this happens with other games as well),
when I get into "intense" areas, the game will crash and Vista will
tell me something to the effect of:

"This application has requested to use X amount of memory. Vista has
only allowed it to use 1024MB."

What gives here? Why would Vista only allow the application to use 1GB
of memory? And is there any way I can turn that off or change it?
