Configure Junk Mail

How can I get my junk mail to mark and delete all at the same time.
Currently when I right click on mail that comes in I can add the address
(unless the field is blank) to my junk mail list but I want my junk mail to
go direct to delete to dump on exit. Can this be done and if so how?
Also how do you handle the mail without a sender or subject in it?
