how do I complete an appointment?

I am using Outlook to manage my schedule. I would like to have completed
appointments removed, with out deleting them. Any ideas or thoughts?

View your Calendar folder in By Category view - turn on Advanced toolbars,
change the view in the white window.

Now you can sort by date and select all the "old" appointments and drag them
to an Archive Calendar folder.
