Default separate instances of Excel 2003

When I click on several Excel files, I would like each to
open in its own window (as happens with Word Files). I
don't want to tile the windows; I want separate instances
of Excel 2003. How do I get there?
Thank you.

I run Office 2000 on NT and it does not work i.e. no new instances appear in the taskbar? Is this maybe a compatibility issue with NT? Word works fine though.
