There are utilities that will sync two folders like this, but if the
personal folder is set as your default, the exchange calendar normally sends
the appointments back to the local calendar. I've heard a few say it
doesn't, so you could try it. See

However - rather than set the pst as the default message store, I would set
exchange as default and use rules to move mail to the pst - this keeps
calendar and contacts online so you can sync over-the-air with devices. Use
autoarchive to keep the calendar smaller, if necessary.
