While it's common for Windows to "burp" and reset the position of desktop
items, it's very odd for so many display settings to be changed. I have no
idea why that would happen. Suggestion: Set desktop up the way that you
want. Restart computer to see if the desktop choices are preserved or not.

If they hold but sticky keys continues to cause a reset, you might try
Control Panel (classic view)> Accessibility Options: On the general page
there is a setting to turn off/not to turn off "accessibility features
after idle for (x) minutes. You could turn this off or try a different time
limit.
If you disabled this setting entirely, you could turn sticky keys off/on
when you want to. Hopefully turning it off manually will not cause the same
reset problem.
