Sending is out of control

I posted below about messages going out from my default e-mail account when I
set them to go from a new account I just set up (Topic: "Mail sending from
wrong account").

Things just got MUCH MUCH worse. I just sent two e-mails of business
correspondence. When the replies came back I realized that the e-mails went
out from my HotMail account. I did a test send and specifically selected my
standard business e-mail as the sender account, and the e-mail arrived in my
inbox as having been sent from my HotMail account. This is very embarassing
since mail from a HotMail account is very unprofessional for business
correspondence. I have my own domain that I send business correespondence
from.

Has anyone here seen anything like this? What could cause Outlook to send
mail from a different account than what is specifically selected to be used?
How do I get it to use the right accounts again?

Are you authenticating with the business account's mail server?

My server's documentation says that outgoing authentication is not supported
on my mail service.

turn on logging and see what is happening when outlook talks to the server.

Yes, I've done that. Is there a reference that explains how to interpret the
info in the log, what to look for, etc.?

BTW, I found a suggestion in another forum to create a new Outlook profile.
I did that, started up Outlook with it, saw something that concerned me (I
don't remember what), closed Outlook and reopened it with the original
profile, and guess what -- my mails are now going out from the right
accounts! Strange fix, huh?

I still have the log though that was created when the problem was happening
and I'd be interested to understand what was going on, if someone can tell me
where to find out how to read the log file.
