Is there a program that can be used to scan your LAN to find out what
systems have ports open or services running that we do not want running
(i.e. 25, 21, 80, 23)?

yes, I believe there are some 3rd party utilities you can get that will do
this. Try going to www.google.com and searching for "portscan" and "LAN"
