preventing Excel from changing number formats

When displaying charts, I make a point to select the particular display
format (dates as MM/DD/YYYY, numbers with comma separators, etc.).
However when I copy the charts from one spreadsheet to another, or send
the charts via email, the formats sometimes change back to the way it
was represented originally (dates as numbers, no comma separator, etc.)
What's weird is that this doesn't happen consistently (only some
charts get affect). Is there any way to prevent this, reverting of
formats, from happening? It's becoming really annoying. Thanks for
your help.
