Outlook 2003 works and then it breaks

Outlook 2003 will be working just fine and then for no apparent reason, it
decides that it can't see the exchange server anymore. The user is
authenticated, they have network access, we can ping the server but Outlook
won't recognize it's there. We can even go into OWA and log in with no
problems. I recreate the profile, I'm not working in Cached Exchange mode.
The only odd thing I notice is that it goes back to using a 2002 splash
screen when it starts up(the gold not the orange of 2003). I've even
uninstalled Office and reinstalled it but the profile remained. Do I need to
uninstall and nuke some files before reinstalling? And if so, which ones?
Please help!!

To recreate the profile (do not copy it);
Control Panel-> Mail-> button Show Profiles

I'm not exactly sure what's up with the Outlook 2002 splash screen as you
can only have one version of Outlook installed at a time. Did a check
already to make sure this is true?
