Is there a way to have NTbackup prompt for additional tapes if the backup
data is too much for 1 tape?

By default it runs through the backup and if it runs out of space on the
tape, it errors tells you that there was too much data for the tape without
the option to continue by adding an additional tape.

Is there a way to have it prompt for another tape?

If it knows that there is freemedia in the pool, it does prompt.
Prior to the backup, place enough tapes in the Free Media pool by writing a freemedia label.
