Explain Dual Lan Cards and Dual Gateways?

Can someone explain the relationship between dual LAN cards...specifically
if the first LAN card is set up to be IP 192.168.1.200 with a gateway of
192.168.1.1 then the 2nd is setup to use the same gateway it opens a dialog
box saying that they are designed to use use the same gateway as a
backup...or something like that. What does this mean exactly and what is a
good strategy to set them up? one as 1.200 and one as 1.199 and what would
the gateway of the 2nd LAN card be then? In the 2nd LAN DNS does the LAN need
to be the internal server DNS?

One is for the Internet and one is for the network...is there somewhere we
can specify which is which?
