Would I be better off buying two Geforce 8600s and running them in
SLI, or just buying a single 8800?

Note: I don't plan to buy a gigantic monitor; only 20" or so

For the price of 2 8600's you can get a 8800.......which is a LOT better
Look at the reviews for both cards and judge for yourself.
Google both

Then get the 8800. Why would you want SLI when a single card option is
available ? I think the marketting hype is getting to too many people.
SLI is good, WHEN you have the top of the line cards. SLI is also good
when you have a single card, and decide to upgrade to dual cards
later. SLI is NOT a good option when you can buy one card that is as
good or better than two cards from the start.

Consider this : With the 8800, if you need to upgrade later, you can
add another 8800 (which will be cheaper then.) With the 8600's, you
are SOL.

Also, consider the simplicity option. With twice as many parts, you
are (almost) twice as likely to have a problem.

Or more, since driver and resource issues are far more likely.
