I assume you mean Word 2007? Draw a text box over the picture set the fill
to 'no color' and type in the box.
A drawing canvas is essentially a means of keeping graphical items together.
You can turn it off from Word Options > Advanced > Editing Options >
Automatically create drawing canvas when inserting autoshapes.
