With Office Enterprise 2007, can I use 'copy to folder' to drop an event or
email into a specific date or an existing individual contact? Is there a way
to open a target folder with the 'copy to folder' command ?

No. If you want to attach an item to a specific item you'll need to attach
it using method that require a few more steps.
