In viewing the Document Map, the highlight is the same color as the heading,
so I cannot tell what heading is being highlighted. I don't want to change
the color of my text, how can I change the color of the highlighting in the
Document Map. I have Word 2000, SR-1

Also, a lot of my headings do not show up in the map, sometimes I have to
re-type the heading before it will appear, and sometimes no matter what I do
it does not appear. What can I do to fix this?

Document Map is a style, so you should be able to make any necessary changes
by editing the DocMap style.
