Where do you set format of email addresses in forwarded messages?

This should be easy but I can't figure it out. I've done quite a bit of
searching on the Net without any luck. First of all I'm new to Outlook so I'm
sure I haven't found all features yet.

Here's what I'm trying to do: When I forward a message I want Outlook to
include the email address of the person who sent me the message (something
like "Jane Smith" ((E-Mail Removed)). Currently it just includes the real
name "Jane Smith". So the person who gets the message from me doesn't know
the email address of the person who sent it to me (assuming they can't look
it up in some directory).
Where do I configure Outlook to include the email address in addition or
instead of the real name in forwarded messages?

In the body of the message, correct? Not possible as far as I can tell,
unless you elect to do it manually by double-clicking the sender in the
original message and then copying the address from the resulting properties
dialogue.

If you double click the email address (name) does it show the real email
address?
