I am trying to figure out how to generate a letter to a contact from Outlook
2007. Older versions had this feature, but I can't seem to locate a way to
accomplish this with 2007. What am I missing?

the option was removed from outlook. You need to start the letter in word
and either insert or copy and paste the address.
