how do I track holiday give aways year to year

We give away various items at the holidays. I want to track these items and
be able to sort out the clients that have received items over the past years.

You could use categories for that. Create one called '(Gift)', or create one
for each gift called '(Gift) Item A', '(Gift) Item B', etc.

Then you can filter a view for contacts who got a special gift, e.g.
Categories='(Gift) Item B', or one for those who never got a gift:
Categories do not contain (Gift).
