How do I stop bold applying to more than selection?

With any sort of formatting including bold, word applies the change to the
whole document - forcing you to use CTR Z to undo the change to the document
and it brings you back to the change that you originally wanted to make...
Can anyone help?

I have never had this happen. If I select (highlight) a word and click Bold,
only that word is made bold. Has your program always done this?
