how do I set the "reply" mail server

I use three different mail servers in Outlook. When I receive a mail and I
hit the reply button, the "from" address that Outlook uses is not the from
address that I would like to use, so I have to manually change this and
sometimes I forget it.

I found a way in Outlook to set the default mail server for new outgoing
mails, but how can I set the mail server (address) for the reply button?

(I hope I made my problem clear)
