How do I set "No Default" for my sender account.

I have a number of e-mail accounts in my Outlook.
I would like that there was no Default account set so that Outlook would
prompt me to select an account when I hit the send button, this way there is
less risk of a message being send from the wrong account.

Outlook by itself doesn't have that ability. There may be add-ins that
allow it, but I can't think of any off-hand.

Your brain is the best technology for that. Simply pat attention to what
account you choose.
