How do I set file associations?

Seems simple enough. We have databases that have our own extensions, and with
the previous Office version, I right clicked and did "Open With". The first
time I did it, I had to browse for MS Access and from then on it was on the
right click menu to do the open. Using Access 2007, this does not work. I
browse and pick MSACCESS.EXE (I have picked the same EXE from Start->Run to
make sure it is the proper one and that works fine and I pasted my file name
as the argument and that worked fin also). I click OK and I am back in the
"Open With" dialog and Access does not appear any where in the list.
