You can't. A System Restore to a previous date might do the trick but this
will apply to all applications on your computer and not just Outlook or
Office.
Better would be to simply reconfigure Outlook with your accounts again. You
can reconnect to any previous mail database (pst-file) via;
File-> Open-> Outlook Data File...
