We sort emails which come into our inbox into folders, and one folder, we
want to send a standard reply to all each day. The emails are not from people
in our contacts list. How can we select mutiple emails and reply to them as
required (not an auto reply, but specific ones we select)

Move/Copy messages you want to reply to into a folder.
Create a rule that replies using a message you define (like, Have server
reply using..), make sure the rule doesn't have any conditions on it (ie,
it'll fire against everything) and, very important, _do not activate the
rule_.
Go into the folder where the messages are and run the rule manually using
Tools - Rules and Alerts - Run Rule Now.
