I am trying to set up an e-survey for audit but don't want people to feel
disinclined to respond as they'll be identifiable. Is there a fairly
straightforward way to make their replies anonymous? I'd be very grateful for
any advice

Don't use email for them to submit their feedback but use a web-form.

Not sure how to do it with Outlook but have you looked at using a survey
site like SurveyMonkey.COM?
