Section breaks aren't required for StyleRef, though they are often advisable
for other reasons (a fact that has escaped the producers of some
print-on-demand books I've seen).

You want to put in your header a Field called STYLEREF (there are lots
of ways to do that, and for specifics you have to tell us which
version of Word you're using). So long as your chapter titles are all
in their own special Style, they will be picked up by those fields.
You inserted a Section Break at the start of each chapter, right?
But note that if your chapter title is too long to fit in a header
(which often happens), you'll have to simply type the shortened form
of the title into the header for that section. Be sure to uncheck
"Same as Previous" in both the section where you type the short
version and in the section after that one.
Or, you could simply type the chapter heading into each chapter's
header, and it will appear on each page in its section.
Note that usually the book title or the chapter author appears on one
side and the chapter title on the other side, rather than the chapter
title on every page.
