How do I maintain single line spacing in a reply e-mail message?

Whenever I reply to an e-mail message and delete some of the unnecessary
sentences, the paragraph formatting becomes automatic. My Word template is
for single line spacing, and the "auto" setting makes it double spacing. I
then have to change that paragraph setting each time. Where/how do I set my
reply default?
